Profile: What Makes Bozal Cuixe Mezcal Special
Bozal mezcals are produced in small, family-run distilleries – only wild-growing agaves are used. The Cuixe comes from the wild cuixe agave, a subspecies of the Karwinskii family. The sample makes it easy to get to know.
It is made by centuries-old methods: the agave hearts are cooked in earthen pit ovens, crushed with a tahona wheel, fermented with wild yeast and distilled in copper pot stills.
