Profile: What Makes Wolfburn Aurora Special
The second bottling from the young Wolfburn distillery, the northernmost distillery on the Scottish mainland. Aurora matured in former bourbon (80%) and sherry casks (20%) and is bottled from unpeated malted barley without chill-filtration and without colouring. A soft, warm malt in which the sherry stays present. The sample makes it easy to get to know.
Tasting Notes: What Wolfburn Aurora Tastes Like
- Nose: Distinct pleasant sherry sweetness, plus dried fruit and malt; freshly cut grass, autumn fruit and a hint of coffee and dark chocolate
- Palate: Warming and soft, the sherry again, then ripe autumn fruit and nutty notes – spicy tones in the background; floral hints and vanilla
- Finish: Long, warming finish, the sherry and the fruit stay present
