Its journey begins in Barbados at the time-honored Stade's West Indies Rum Distillery and in Trinidad at the experienced Trinidad Distillers Ltd. Both know exactly what they're doing: molasses is fermented for three to four days, then distilled in pot and column stills – a blend of classic craftsmanship and modern efficiency.
With a dosage of 19 grams per liter, the rum also has a certain sense of balance – you could say it takes life sweet, but not too sweet. After distillation, the first maturation phase takes place right on site: several years in 200-liter white oak Casks under the Caribbean sun. This is, so to speak, its tropical training. After that, things get serious – or rather, French.
The rum leaves the islands, crosses the Atlantic, and arrives at Maison Ferrand in southwestern France. There, it receives its finishing touch in small, intensely toasted Ferrand barrels. These impart those delicate, slightly smoky notes that can't be trained – they have to be earned. The result is a rum that combines the serenity of the Caribbean with the precision of French cask craftsmanship.
