Portrait: What makes the Daftmill 12 year old Summer Batch Release 2012/2025 special
Daftmill is one of the few distilleries that grew up with cows rather than copper kettles. And you can tell - in the best sense of the word. While other distilleries produce around the clock, the Cuthbert family only makes whisky when there are no carrots to plant or cows to feed. In other words: only in the off-season. The result? One of Scotland's rarest and most down-to-earth whiskies. Located in the heart of the Lowlands, on their own Daftmill Farm, the family not only grows potatoes and malting barley, but has also been processing the latter themselves since 2006 – quietly, entirely by hand, and without any major marketing hype. This means that barely more than 100 Casks are produced each year – in whisky terms, that's roughly equivalent to a large distillery writing a weekly schedule and then going on vacation.
The Daftmill Summer Batch Release 2012/2025 is another treasure from the barn. Distilled in July and August 2012, from the distillery's own Concerto barley, which was harvested and malted in 2011 – a true long-term planner. Matured in 23 first-fill Bourbon Barrels and bottled in 5,250 bottles in 2025. And, of course, as always: not colored, not chill-filtered, not over-aged.
Daftmill 12 year old - For those who prefer their whisky from the farmer rather than the master distiller. And they know: patience is an agricultural virtue.

Tasting Notes: This is what the Daftmill 12 year old Summer Batch Release 2012/2025 tastes like.
- Nose: Fresh and elegant with aromas of ripe pear, green apples, and honey. Hints of lemon peel, vanilla, and a touch of freshly mown meadow - typical Lowland, typical Daftmill.
- Palate: Smooth, balanced, and finely structured. Sweet cereal notes meet light fruits, butterscotch, and a hint of oak spice. Light citrus freshness and vanilla from the bourbon cask create a lively mouthfeel.
- Finish: Medium to long with gentle herbal notes, some oak spice, and a dry, elegant sweetness. The final impression: subtle yet lingering.
