César Marti, Master Blender At Eminente, who is considered a rum oenologist due to his knowledge and background, experiments with different levels of maturation of aguardientes in different environments and barrels. His final experiment led him to produce the first edition of Eminente Gran Reserva. César Marti created the Eminente Gran Reserva Edition N°1 with 80% aguardientes, which he matured under special conditions: in a dry cellar where the water evaporates faster than the alcohol. The aguardientes and the light rum are aged separately for 10 years, then they are blended and stored in French oak barrels for three months. The finish in French oak barrels brings complexity but also balance in the mouth with notes of honey, sandalwood and orange blossom. 
Eminente Gran Reserva is a rum made in the tradition of the center of the island of Cuba, by its inhabitants is called “Isla del Cocodrilo” because its unusual shape is reminiscent of that of the native crocodile.
