Profile: What Makes Crossbill Highland Dry Gin Special
Jonathan Engels is the man behind Crossbill Gin. When he started production in 2016, he had the idea of returning to a tradition lost for 200 years – the harvesting of Scottish wild juniper. To do this, he worked closely with the Forestry Commission and Plantlife, meaning Crossbill Gin is made from 100% Scottish-sourced botanicals. Crossbill Gin gets by with just two botanicals – rosehip and juniper berries, both hand-picked and sorted on site in the Cairngorms National Park in the Scottish Highlands by Jonathan and a few harvest helpers. The ingredients are then not dried but shock-frozen, so they can be processed while virtually fresh. This unusual method gives Crossbill Gin a particularly soft and fruity flavour. The sample is ideal for an easy introduction to this special Highland gin.
