The Ballechin 15 year old Heavily Peated 1st-fill Bourbon Barrels from the Un-chillfiltered Collection of the independent bottler Signatory definitely belongs in this category - one that doesn't just "finish" quickly, but only decides, after a long stay in the cask, that it is now slowly mature enough. This distinctive character was distilled in September 2010 at the small but very self-assured Edradour Distillery in the Scottish Highlands.
"Small" is not a polite euphemism here, but rather a deliberate choice: Edradour is considered one of the smallest traditional distilleries in Scotland. While other companies are building industrial buildings, here everything fits into a setting that is more reminiscent of a well-kept whisky village than a factory. The name "Ballechin" is something like the distillery's smoky alter ego – the part that decided not to always be polite.
You could say: Edradour in a tweed jacket and Ballechin in leather jacket mode. The whole thing was bottled by the independent bottler Signatory Vintage, more precisely in their "Un-chillfiltered Collection." That sounds a bit like a very serious group, primarily committed to ensuring that whisky isn't unnecessarily altered by refrigeration policies. Furthermore: no colorings, no tricks, no cosmetic interventions – more like “whisky, but honestly preserved.”
