When two When whisky giants like Andrew Symington and Billy Walker combine their talents, you can look forward to liquid gold - or in this case, the GlenAllachie 15 Year Old from 1st-fill Oloroso Sherry Butt #900864. A name like a novel, but hey, the whisky has a history too!

Let's start with the stage: The GlenAllachie Distillery is idyllically situated in Speyside, the best part of Scotland for whisky lovers. Founded in 1967 – a bit of a late bloomer among distilleries – it has blossomed from a shy newcomer to a celebrated star of the scene, at least since Billy Walker took over. Walker is no stranger: He nurtured BenRiach, GlenDronach, and Glenglassaugh, among others, and is now working at GlenAllachie like a kid in a candy store.

And then Andrew Symington comes into play, founder of Signatory Vintage and passionate cask whisperer. For his Symington's Choice series, he fishes only the best casks from the whisky ocean - and the GlenAllachie 2009/2025 was evidently a rare catch. Cask No. 900864, a first-fill Oloroso Sherry Butt, was carefully and patiently aged for 15 years - the whisky equivalent of a maturation with distinction.

The result? A strictly limited single cask, beautifully labeled, and ideal for showing off - sorry, “sharing with pleasure.” Whoever gets hold of it will be in for a treat: Here you get a Speyside treasure with twice the expertise - and a story that's almost as good to tell as it is to taste.

• Nose: A true sherry showstopper! From the very first sniff, dense aromas of dark dried fruits rise to the nose – raisins, figs, and dates lead the way. Behind it lie noble oak aromas, roasted walnuts, and a hint of mocha - a touch of orange zest brings freshness, while a hint of old leather and a touch of Christmas biscuits provide depth and coziness - intense, complex, and yet wonderfully balanced
• Palate: Full-bodied and powerful, as you would expect from a 1st-fill Oloroso sherry cask - but never overloaded - the dried fruits continue to dance: sultanas, dried plums, and candied cherries mingle with dark chocolate, cinnamon, and a hint of clove - added to this is a rich sweetness, almost like caramel syrup, which combines perfectly with more bitter notes of espresso and oak spice - you can feel: This cask had a lot to say - and the whisky listens closely
