Anyone who spontaneously thinks of a particularly restful night's sleep when they hear the term "Double Cask" (double maturation) is only partly wrong. With the Pierre Ferrand Double Cask, it means nothing less than the revival of a historical maturation technique, of which the House of Ferrand is justifiably very proud. For five generations, the focus here – on the picturesque "Domaine du Logis d'Angeac" – has not been on mass production, but on genuine craftsmanship.
And this is evident in this cognac: The casks immortalized on the label and the portrait of Elie Ferrand VIII are more than mere decoration – they are a tribute to a pioneer of the art of aging. The Double Cask is produced from Ugni Blanc grapes of the Grande Champagne, the top terroir of the Cognac appellation. After fermentation lasting five to seven days, the cognac undergoes double distillation over an open flame in a 25-hectoliter pot still – a process so steeped in tradition that modern efficiency fanatics would likely tip their hats in awe.
The aging process begins in 350-liter French Limousin oak barrels before the cognac receives its renowned finish: additional maturation in Pedro Ximénez sherry casks – often referred to as "PX" because it's easier to pronounce when you're already in the middle of a story.
The cognac spends a full six to twelve months there, depending on the cask's whim and the cellar master's expertise.
It's no coincidence that Pierre Ferrand is considered a welcome exception in an often industrialized cognac landscape. In dark, damp, ground-level cellars, eaux-de-vie mature here, embodying tradition, skill, and passion – so naturally that one almost believes the barrels secretly continue their development at night.

- Nose: A pronounced fruity opening with spicy sweetness greets the nose. Dried plums with a fine chocolate coating meld with nutty hints of hazelnut. Balanced wood notes and a delicate touch of vanilla join in, lending the bouquet an elegant depth.
- Palate: On the palate, the PX finish is balanced and clearly present. Notes of dried fruit, caramel, and ripe figs combine with a pleasantly nutty character. The fruit sweetness is harmoniously integrated, accompanied by slightly spicy accents. A very subtle, invigorating interplay of fruit and fine acidity provides liveliness and structure.
