Portrait: What makes the Jean-Luc Pasquet L81 1981 Cognac Fins Bois Hampden Cask Finish Journal des Kirsch N. 7 special

The Single Casks from the Journal des Kirsch series report on the experiences that French spirits have to offer: excitement, surprise, delight and variety. The latter is particularly true of the seventh edition: theinnovative Jean-Luc Pasquet L81 1981 Cognac Fins Bois Hampden Cask Finish.

As traditional in the Jean-Luc Pasquet family business Cognac made from Fins Bois grapes, the spirit treasure was transferred to a freshly emptied C<>H Hampden Cask after more than 40 years of maturation in French oak. The result? An unprecedented dynamic between ester and rancio notes that reaches a new level of taste.

The experimental Eau de Vie de Vin is happy to forego this on its legal status as a cognac. This is reserved for brandies from the region that matured in French Limousin and Tronçais oak barrels or barrels pre-filled with grape products such as wine, sherry or port.

The remarkable single cask was in natural cask strength and without Additives bottled in 318 bottles. At a high 52.5%vol. The interaction of French oak and Hampden barrel comes into its own. Classic rancio notes are complemented for the first time by ester notes characteristic of the Jamaican rum icon, which give fruity and tropical accents.
