The Kilchoman Cognac Cask Matured is Kilchoman's first official limited release, matured exclusively in ex-cognac casks.
Distilled in 2016, the single malt matured in 32 casks that previously contained cognac.
Maturation in ex-Cognac casks gives the Kilchoman Cognac Cask Matured notes of pear, apricots and hints of spice, perfectly balanced with Kilchoman's natural citrus sweetness and maritime peat smoke.
Tasting Notes: This is how the Kilchoman Cognac Cask Matured tastes
- Nose: Rich aromas of ripe apples and pears at the beginning, followed by fresh herbs - subtle aromas of heather honey and spices - all over Peat smoke
- Palate: velvety soft mouthfeel - buttery with notes of dried lime and apricots, then becoming spicier again with nutmeg and cinnamon, toasted oak and peat smoke accompany the taste
- Finish: long finish - now dried fruit and marzipan, plus crystallized sugar and lots of dripping smoke - well balanced between sweetness and spiciness
