A particular highlight of the range is the Kilchoman Vintage 2015 Pedro Ximénez Cask #330 #5/5, which matured exclusively in a former Pedro Ximénez hogshead - full of aromas of dry fruits and dark chocolate, the citrus notes for the classic Islay style and the floral note typical of Kilchoman. The whiskey is lightly peated at 20ppm.

The visionary aspiration of the 100% Islay philosophy finds its expression in this unique single cask collection.  

Carried on by the centuries-old tradition of "farm distilling", the endless possibilities of local artisan processes and outstanding cask management, Kilchoman's skilful variety is evident.  

Different cask types, vintages and smoke levels in cask strength are presented.  

Each of the casks is numbered by I-V for the release AN GEAMHRADH 2022, each bottle individually numbered by hand and provided with a brief Distiller's Tasting Note.

Kilchoman is proud to be Scotland's To be the only distillery to present a single malt made from specially grown and malted barley.  

The Uniquely Islay series gives Kilchoman the opportunity to experiment with and present unusual cask types.

"So there are some really interesting cask types here which is something that we now specialize in a bit. We call them our Experimental Casks that we fill; all from different types of wine and spirits," explains Anthony Wills, Kilchoman Founder and MD.

• Nose: strong aromas of juicy dried fruits such as dates, figs and raisins, with sweet jam and some peat smoke 
• Palate: soft and mouth-filling, again the dates and figs, plus prunes and dark chocolate - above all a light peat smoke
• Finish: long in the pleasantly sweet finish - the fruits and chocolate are present
