The Edradour Distillery in the Scottish Highlands is a true gem in the world of Single Malts.
The owner of this pearl is the independent bottler Signatory - and what could be nicer with pearls than processing them into a necklace?
With this in mind, exceptional casks of such high quality are regularly selected from the warehouses of the Edradour Distillery that they find their way to Connoisseurs all over the world as Single Cask Bottlings.
This is also the case with this bottling of Cask #297 - with a strong dark color it is abundantly clear that the single malt was stored in a former Sherry Cask for more than 10 years.
Distilled in June 2012, the Single Malt Whisky was aged for over ten years in Cask Number #297, then the Cask was bottled in the Un-chillfiltered Collection in November 2022.
Nose: soft, full aromas of prunes, plums and black cherries, with dried figs and raisins - above all soft caramel and dark chocolate, slightly spicy
Palate: mouth-filling, soft and creamy in taste - the sherry cask influence is unmistakable - intensive notes of dark fruits, again the plums and cherries, plus figs, dates and raisins - then follow mild spicy notes, dark chocolate, cream and caramel
Finish: Long, soft finish with sweet and spicy hints of raisins, dark chocolate and spicy oak
