If you really want to know what whiskey is all about, Waterford is the place to be. The state-of-the-art distillery from the south-east of Ireland is based on one principle: barley is the source of the aromatic diversity of malt whiskey. In the pioneering quest for the most natural whiskey flavor, Waterford has now brought flavors from a bygone era back to life.
The Waterford Heritage: Hunter 1.1 is based on the old barley variety of the same name, which had disappeared from the Irish landscape since the 1970s.
The aromatically unique ancestral grain was painstakingly grown from just 50 grams of seed and multiplied over several years before the yield was sufficient for distillation.
Or as Mark Reynier says: "You have to be a bit mad to do it".
Only 50 casks were distilled from the first harvest.
Waterford Heritage: Hunter 1.1 is a remarkable showcase of what whiskey really tasted like before the days of mass-produced grain.
