Not chill-filtered in a different way!
This 7 year old Caol Ila from Speyside, Scotland comes from three Hogsheads.
Signatory did not use chill filtration for this bottling, but reduced the alcohol content to 40%vol., so that the single malt appears very "foggy" in the bottle even at room temperature.
The reason for this are the oils and fats contained in the whisky, which are filtered out during chill filtration, but here these flavor carriers are fully contained.
Nose: lots of sea and seaweed, damp ropes and canvas - peat smoke and spicy aromas over it all
Palate: very oily and creamy for its age, lots of peat and campfire smoke, phenolic notes and spicy oak
Finish: Long finish, now becoming sweeter, dark caramel with peat and ash
