A meanwhile very nice tradition at Signatory is the bottling of individual casks of a 10-year-old Edradour - the traditionally always very dark color of the Single Malt does not allow any other conclusion that a sherry cask was selected here and bottled in Signatory's Un-chillfiltered Collection.
The Cask #156 selected here was filled with fresh distillate on March 23, 2012 and matured in the Cask for over ten years until it was bottled on May 12, 2022
Nose: intensive aromas of ripe red berries, with dark stone fruit and spicy oak - in the background ripe barley, shortbread and liquorice root
Palate: mouth-filling and soft with a fruity taste at the beginning - dried fruits such as figs and prunes are present, plus soft caramel fudge and fresh herbs - then see below Nice notes of fresh pastries and English fruitcake
Finish: long, soft finish with lots of fruit and a light spiciness
