Edinburgh in distilling-fever: Holyrood sets new whisky impulses for explorers

Something new is brewing in Edinburgh's Old Town: Founded in 2019, Holyrood Distillery is bringing single malt production back to Scotland's hilltop capital after more than 100 years.
Inspired but not dictated by the past, Holyrood blends artisan tradition with bold new ideas for taste - a promising combination that has already been recognized with the award of 'Icons of Whiskey Scotland - Craft Producer of the Year 2022'.
 
Holyrood explores new horizons in whisky production by experimenting with malts, fermentation and special casks - inspired by Edinburgh's rich brewing heritage.
The New Makes of the distillery show how the spirit of research will affect the future Holyrood Single Malt.

Each Brewer's Series whisky spirit from the distillery's slender, tall pot stills references a different element of the brewing process - from yeast selection to specific malt ratios.
Partly aged, partly in casks, the bold malt spirits demonstrate the variety of flavors that Holyrood's experimental approach is capable of producing.

Aged New Make Spirit Series No. 03 is the third bottling of the Cask-aged New Make series.
American Ale Yeast gives a cask-aged foretaste of Holyrood Single Malt Whisky, which was able to develop its full-bodied, malty profile after 306 days in the first-fill American Oak Bourbon Barrel.
Edinburgh's newest distillery extensively documents every detail of their pioneering bottlings on the modern labels.
