Something new is brewing in Edinburgh's Old Town: Founded in 2019, Holyrood Distillery is bringing single malt production back to Scotland's hilltop capital after more than 100 years.
Inspired but not dictated by the past, Holyrood blends artisan tradition with bold new ideas for taste - a promising combination that has already been recognized with the award of 'Icons of Whiskey Scotland - Craft Producer of the Year 2022'.
Holyrood explores new horizons in whisky production by experimenting with malts, fermentation and special casks - inspired by Edinburgh's rich brewing heritage.
The New Makes of the distillery show how the spirit of research will affect the future Holyrood Single Malt.
Each Brewer's Series whisky spirit from the distillery's slender, tall pot stills references a different element of the brewing process - from yeast selection to specific malt ratios.
Partly aged, partly in casks, the bold malt spirits demonstrate the variety of flavors that Holyrood's experimental approach is capable of producing.
New Make Spirit Series No. 04 is the fourth bottling of the Brewer's series.
"Made by Edinburgh" is the culmination of Holyrood's adventurous spirit in researching traditional brewer's yeasts and specialty malts.
Brewer's Series No. 4 is a New Make inspired by Edinburgh's rich brewing history.
Traditional Edinburgh ale yeast was combined with a Mash Bill recipe inspired by an 80 shilling ale recipe to create this unique New Make.
A combination of fire malt and two special malts.
