Annandale 2017 Man O' Words Founders Selection #307 60,4%vol. 0,7l

Under the expert guidance of the late Dr. Jim Swan filled Annandale Distillery just 90 230 liter STR Burgundy casks with award-winning peated and unpeated New Make malt in March 2017.

These barrels were the brainchild of the late Dr. Jim Swan and a collaboration with Spanish cooperage Jose Miguel Martin.
Originally filled with fine French Burgundy for a period of up to seven years, these casks went through the unique STR (Shaved Toasting and Recharring) firing process after being emptied.

Each cask went through a unique shaving process, planing the staves to reveal a combination of lightly wine-soaked and virgin oak staves.
Afterwards, the casks are toasted over a fire with oak shavings to caramelize the wood sugar and vanillin exposed by the shaving process.
This is a very delicate process: the wine contained in the staves must also be caramelized, but overheating can potentially spoil the wine.
Finally, the casks are refired, this increases the surface area exposed to the spirit and maximizes aroma extraction.

These casks were then partially filled with Oloroso sherry to keep the wood hydrated during transport from Spain to the Annandale Distillery.

In November 2017, two of these casks were removed when they were only eight months old.
Annandale felt that the casks, even aged just eight months, were so stunning in flavor that they were presented and served at Annandale's launch event on November 15th, 2017 - the day cask number 1 was born officially became whisky.

As these casks matured, casks 324 (Man O' Words - filled 16/03/2017) and 357 (Man O' Sword - filled 23/03/2017) were filled on June 12, 2020.
Two wonderful whiskys that combine delicious fruits such as pear, strawberry and coconut with deliciously delicate notes of spice and pepper to tickle the palate.

The Founders Selection is now the next step - a single malt whisky with a wonderfully rich, golden amber tone

Nose: Spicy aromas of cinnamon and nutmeg - then creamy vanilla, caramel and sweet caramelized demerara sugar
Palate: Hot melted butter envelops the palate, followed by hints of fresh conference pear, summer strawberries and fresh cream, then Braeburn apple, blackberry, plum and cool, fresh honeydew melon
