When a conservationist becomes a mixologist: Everleaf brings together the passions of former conservation biologist and current bar owner Paul Mathew - and benefits from his deep understanding of nature.
Inspired by mountains, forests and the sea, he designs his alcohol-free aperitifs exclusively with botanicals from sustainable production.
Mathew also solves the challenge of the right texture in a natural way.
He skilfully imitates the alcohol's own consistency with extracts from acacia or algae, for example.
For Everleaf Forest he combines the essences of 14 botanicals, obtained from various methods from maceration to steam infusion.
Complex and bittersweet, the low-calorie aperitif has less than 0.5% vol. Alcohol content (less than the alcohol content of a ripe banana) in fragrant forests.
In combination with tonic water, spritz fans in particular will enjoy this non-alcoholic drink.
Botanicals: Madagascar vanilla, orange blossom, saffron, gentian, pink pepper, fennel, vetiver sweet grass, orris root, cassia bark, cinnamon, angelica root, licorice, coriander seeds, chamomile
Nose: strong aromas of vetiver sweet grass and orange blossom with notes of earthy orris root and warm vanilla
Taste: strong and dynamic with citrus fruits, bark, spices, bittersweet roots and spicy saffron
Finish: long and complex, with the mouthfeel characteristic of Everleaf, which holds the multitude of aromas and extends it with the bitter gentian root
