The unique whisky items are always undyed and without chill filtration, but sometimes with a wood finish.
The latter is the case for the noble Caol Ila 2007/2021.
Distilled in 2007 on the East Coast Islays, Gordon & MacPhail first refilled the peaty distillate in refill bourbon barrels and then refined the whisky in Hermitage Casks for a period of three years.
These barrels previously held one of France's most famous wines.
The ruby red Hermitage is mostly made from the Syrah grape and is characterized by strength as well as finesse.
For 12-year-old Caol Ila this means: lush fruit notes in harmony with spicy-sweet smoke.
