Kilchoman Distillery sits nestled amongst the traditional buildings of Rockside Farm on the north-west coast of Islay.
Famous as Islay’s Farm Distillery, the distillery’s barley fields stretch west to the shores of Machir Bay and the Atlantic Ocean.
Kilchoman is unique in many ways, most notably for Scotland’s only Single Farm Single Malt.

Genesis tells the story of the creation of Kilchoman-Whisky - our 1130 day journey from barley to bottle with the desire to resurrect the grass roots tradition of farm distilling.
Each stage of the whisky-making process has a profound influence on the character of our whisky.
Malting represents the second stage of this process.

Days 6-12:
Kilchoman is one of only a handful of distilleries in Scotland still practicing traditional floor malting, a process which almost all distilleries outsourced with the onset of commercial distilling.
The process involves soaking the barley in water before it is laid on a concrete floor and regularly turned by hand.
This triggers the barley to germinate, allowing for the conversion of starch to fermentable sugars and alcohol.
The labour intensive nature of floor malting is a significant factor in its demise, though it remains at the heart of Kilchoman’s 100% Islay philosophy.

This release is produced from a combination of Concerto and Laureate barley malted here at Kilchoman and Concerto barley malted by Port Ellen maltings.
