Already sold out before bottling: The inaugural release of the Raasay Distillery in December 2020 made people look forward to the first signature single malt whisky from the new distillery on Raasay.

Now it's finally here! The recipe combines peated and unpeated Isle of Raasay raw spirits.

Both mature separately on the coast of the tiny Scottish island in three selected Cask types: First-Fill Rye Whiskey Casks, Virgin Chinkapin Oak Casks and First-Fill Bordeaux Red Wine Casks.

The result of this pioneer barrel combination in the history of Scotch whisky? Elegance, complexity and depth of character!

Here cherries meet apricots, wood smoke meets salted caramel - great pleasure meets expectant connoisseurs.

The New Make of the Raasay Distillery already brings dark fruit notes with it.

Mineral-rich Raasay water and a very long fermentation of up to 118 hours (5 days) ensure the characteristic taste of sweet blackberry fruits even before contact with the barrel.

This is what Raasay tastes like - the young distillery emphasizes this with its own bottle shape.

The uneven surface captures the wild beauty of the island landscape and its geological heritage.

The basis for the Signature Single Malt is malt made from Scottish barley, kilned over Highland peat. Still!

Because only using ingredients from the stormy Hebridean island is the declared goal of the team.

In return, Bill Dobbie and Alasdair Day brought barley cultivation back to Raasay in May 2017 after more than 40 years.

Since then, the old Icelandic barley varieties Bere and Iskria have been thriving here.

Nose: sweetness and smoke, wood smoke in sea air - dried and ripe apricots, candied fruits and ice cherries

Taste: Sweet spices, cinnamon and black pepper as well as black currant and wood smoke, with heather, honey and salted caramel, sweet and salted popcorn and black cherries

Finish: pleasantly dry and long with a hint of salt, fine wood smoke and dried fruits

Distilled: November 3rd, 2017 - April 6th, 2018

Bottled: May 10th, 2021 - June 4th, 2021
