Two American ex-academics with burner roots living in the middle of Chicago have built the largest independent craft distillery in the United States: that is Koval.
Innovative Whiskeys and Gins are created here according to the "grain-to-bottle principle" from mainly unmalted, often unconventional organic grain.

Koval gets the distillate for his dry Gin himself from a Rye mash.
In the particularly pure, light raw spirit from the "Heart Cut", the Americans then macerate 12 botanicals: juniper, cinnamon, coriander, grains of paradise, orange and lemon peel, lemongrass, rose hip, cardamom, aniseed, fennel and angelica root.

The lemony-flowery and Award-winning gin is the basis for the aperitif variant in the range of the Chicago distillery: Koval Cranberry Gin Liqueur.
It has a fruity and bittersweet taste Liqueur sweetened with organically grown cane sugar has the potential to become a new favorite base for light cocktails.
