Around six years later, his Waterford distillery enriches the whiskey world with distillates that are the result of the radical implementation of terroir.
Irish barley is grown, stored, malted and distilled separately for Waterford, in line with the principle known from the world of winegrowers.
Because: Terroir, that is the knowledge that soil composition, solar radiation or location lead to clear differences - not only in the barley itself, but also in the aroma of single malt whiskeys.

Protected, in the lee of Bishopswood, the Lakefield Farm stands on undulating lowland terroir with well-drained, deep clay soils.
The land is farmed by Seamus Duggan, winner of the Waterford Trophy for Barley Farmer of the Year 2019.
The barley of exceptional quality is the distillation basis for Lakefield: Edition 1.1, a soft single malt with notes of rhubarb and freshly baked apple pie.
Nose: warm pudding and freshly baked bread combine with red apple, milk chocolate, and dried flowers - with buttercream and pine needles
Taste: gentle notes of cloves, a nice note of pepper with bread and malt biscuits, followed by honeydew melon and pears
Finish: long finish - all the taste notes become more and more - like the path of a small river to a large river
Age: 3 years, 7 months, 28 days
