"Today I bought a distillery - it's good to be back," announced Mark Reynier in a 2014 tweet.
Around six years later, his Waterford distillery enriches the whiskey world with distillates that are the result of the radical implementation of terroir.
Irish barley is grown, stored, malted and distilled separately for Waterford, in line with the principle known from the world of winegrowers.
Because: Terroir, that is the knowledge that soil composition, solar radiation or location lead to clear differences - not only in the barley itself, but also in the aroma of single malt whiskeys.
Hook Head Farm is in the shadow of a lighthouse on the south coast of Ireland - here Martin Foley grows barley on clay/loam soils.
The extremely maritime terroir is exposed to the whole range of salty storms and sea breezes - and characterizes Hook Head: Edition 1.1 with an intense flavor, with salted caramel, liquorice and lemon peel.
Nose: earthy maltiness and aromas of fresh earth combine with citrus peel, bread crust, the spice of cloves and white pepper, then caramel, milk chocolate and salted popcorn, to aromas of fresh hay and green oak leaves
Taste: intensely spicy with cloves and white pepper, with salted caramel, liquorice and ginger biscuits as well as lemon peel and chili chocolate
Finish: dry, but with a persistent oiliness that keeps the sharpness for a long time
