Kopke is the oldest port wine house - every wine in this house tells a story.
The grapes for Kopkes Colheitas are harvested and destemmed by hand at the optimum time, then pressed and processed.
The wine is carefully macerated to extract the colour, tannins and aromas, which are enhanced by constant stirring during fermentation - this is done in barrels (lagares) at a controlled temperature between 28-30 degrees Celsius until the desired level of sweetness (baumé) is reached is.
At this point pomace brandy is then added to make the final fortified wine.
The result is a high quality wine made from a single harvest.
A Colheita wine ages in oak barrels, never less than seven years.
The port wine is then bottled.
The Kopke 2008 Colheita has a deep red color with a yellow-brown edge.
Nose: complex aromas of dried fruits, over all aromas of spices
Palate: refined and delicate on the palate, with a good structure, a balanced acidity and a pleasant smoothness
Finish: a long and persistent finish
Served chilled, the Kopke 2008 Colheita unfolds all its finesse and sophistication, especially when drunk with desserts with caramel, dried fruits and spices, such as caramel fondant with apple-ginger jelly, tarte tatin, crème brûlée and medium-firm cheese.
It is best to serve the Kopke 2008 Colheita at a temperature between 12 and 14 degrees Celsius.
