Even if Signatory does not indicate which barrel type was selected for this bottling, it is not difficult to guess where the rich dark color comes from - with absolute certainty from a former Sherry Cask!
Distilled on May 7th, 2010, the Single Malt Whisky matured for exactly ten years in Cask #116, bottled on its tenth birthday, May 7th, 2020. Nose: spicy oak and aromas of pastries, plus sherry aromas with licorice and a little fennel seed
Taste: again the pastries, with caramel and juicy dried fruit - then again clearly sherry and dark chocolate
Finish: medium-length, warm finish with light sherry tones, with raisins and again the dark chocolate
