For this bottling Signatory selected two exBourbon Barrels, in which previously matured Single Malt Whisky from the Scottish Whisky island Islay.
Distilled on October 15, 2009, the Barrels matured for over eight years until August 17, 2018, then the independent bottler, the Barrels together and filled in the Un-Chillfiltered Collection from.
Nose: like the soil in a Dunnage warehouse, with peat and smoke - in the background slightly fruity aromas, some oak and phenols
Taste: more and more peat smoke and phenols, old leather and beeswax polish - above the light notes of exotic fruits, paired with spicy notes of cinnamon and ginger
Finish: peat, leather and fruit on the finish - warming
