For this bottling Signatory selected two exBourbon barrels, in which previously stored a single malt whiskey from the Scottish whiskey island Islay.
Distilled on October 15, 2009, the barrels stored for over eight years until February 28, 2018, then the independent bottler combined the barrels and filled them in the Un-Chillfiltered Collection.
Aroma: like the soil in a Dunnage warehouse, with peat and smoke - in the background slightly fruity aromas, some oak and phenols
Taste: more and more peat smoke and phenols, old leather and beeswax polish - above the light notes of exotic fruits, paired with spicy notes of cinnamon and ginger
Finish: peat, leather and fruit on the finish - warming
