Signatory chose two exBourbon barrels from 2000 for this bottling, married them and bottled the single malt whisky on August 17, 1818 in the Un-chillfiltered Collection.
Nose: exotic fruits and warm apple pie - fresh herbs behind, especially mint
Taste: clearly ripe barley and brown sugar - again the fruits, paired with a peppery note
Finish: medium Departure, notes of fresh cake with chocolate, with tones of freshly cut grass
