A youthful Caol Ila with an unmistakable Islay note!
Distilled on October 3rd, 2012, the two selected hogsheads were matured until November 19th, 2021 before Signatory included them in the Un-Chillfiltered Collection with an alcohol content of 46%vol. bottled.
Nose: lots of sea and seaweed, damp ropes and canvas - above all peat smoke and spicy aromas
Taste: very oily and creamy in flavor for its age, lots of peat and campfire smoke, phenolic notes and spicy oak
Finish: long finish, now becoming sweeter, dark caramel with peat and ash
