Irish wood for Irish whiskey! Dair Ghaelach (Gaelic - spoken Daar Gählock) means Irish oak.
Forty-eight Irish oak barrels hauled into the Ballaghtobin Estates in Kilkenny, Ireland, had Midleton built to store Single Pot Still Whiskey for a second ripening previously stored in American Oak exBourbon barrels for 15-22 years
For the barrels used only the wood of a tree, so that you can specify the numbered tree on the label when bottling the bottles.

Aroma: intense spicy, paired with sweet vanilla - with chocolate, honey and roasted coffee beans - then it gets fruity: red berries, pineapple and ripe bananas
Taste: soft and spicy, clearly oak, cloves and cinnamon - then come Fudge, milk chocolate and warm apple compote
Departure: exceptionally long finish - sweet and spicy - again the oak
