The Irish distillery Midleton is breaking new ground!
After a storage period of 15-22 years in American Oak exBourbon barrels, the whiskey was bottled for a second maturation in new Virgin Irish Oak Hogsheads. The wood for these barrels comes from the Ballaghtobin Estate in Kilkenny, Ireland.
Only 48 barrels were built at Midleton from this Irish wood, each barrel was made from the wood of only one tree, so that you can specify the numbered tree on the label when bottling the bottles.
Dair Ghaelach (Gaelic - spoken Daar Gählock) means Irish oak - a single pot still whiskey, bottled in barrel strength.
Aroma: intense spicy, paired with sweet vanilla - with chocolate, honey and roasted coffee beans - then it gets fruity: red berries, pineapple and ripe bananas
Taste: soft and spicy, clearly oak, cloves and cinnamon - then come Fudge, milk chocolate and warm apple compote
Departure: exceptionally long finish - sweet and spicy - again the oak
