A true pot still whiskey from Ireland.
For 10 years, Cooley's Irish Single Malt Whiskey was matured in exBourbon barrels, after which it received a second ripening in exSherry barrels by the bottler Hibernia Distillers.
This whiskey was named after Douglas Hyde - the first president of Ireland, who took office in 1938 and until 1945 held this.
This first bottling of Hibernia Distillers is limited to 5,000 individual numbered bottles.
Aroma: delicate aromas of peach and cream, with vanilla, a soft barley note, citrus, sweet honey and caramel - then develops banana and orange with light herbal aromas
Taste: very soft in the taste, creamy with a lot of fruit, especially apricot and plum - in the background again honey and vanilla
Finish: rich and spicy finish - lingering for a long time
